Bean Curry

Jeni passed this recipe on to me and I'm so glad she did. It has my three favourite things: tasty, quick and nutritious. Thanks for sharing Jeni! The last time I made curry I didn't have garam masala so I left it out. Never again! Garam masala is my new favourite spice. Yum!

Josh Rating: It was okay (Josh doesn't like beans very much so don't let this rating put you off!)

Prep + Cook Time: 25 minutes

1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, finely minced
1 teaspoon freshly grated ginger
1 large tomato, chopped
1/2 teaspoon tumeric
pinch cayenne, or to taste
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon Garam Masala
3/4 cup half and half
1 cup vegetable stock
1 can black-eyed peas, lightly drained
2 tablespoons chopped fresh cilantro

Heat oil in a large skillet over medium heat. Add onion; saute 5 minutes or until translucent and slightly browned. Stir in garlic and grated ginger root; stir constantly for 30 seconds. Add tomato; cook for 2 minutes. Stir in turmeric, cayenne, salt, paprika, and garam masala; stir constantly for 30 seconds. Add half and half, stock, and black-eyed peas. Reduce heat and simmer 5 minutes, stirring occasionally. Stir in cilantro. Serve immediately with rice, chapati, or naan.

I made this tonight--or a variation of it. I left the cayenne out all together, unintentionally added curry instead of Garam Masala (but realized my mistake and added the GM anyway), and substituted Italian parsley for the cilantro. In an attempt to mellow out the curry I added more half and half and mixed 3/4 cup stock with cornstarch to thicken it (Brian likes thick sauces).

At the beginning of dinner Brian made a comment about the lack of meat, which I ignored. During dinner, in an effort to encourage Sam, he said, "It's not that bad," but with a look from me he quickly added, "It's good." Then to my amazement, at the end of dinner he said, "I actually liked it,"
(then made some comment about his expectations), which really is saying something for Mr. Meat who hates beans.
BTW, you didn't list garlic in the ingredient list.

I'm glad that Brian was receptive to this meal. It can be discouraging cooking veg meals with a hard-core meat lover in your family. Thanks for letting me know about the glaric. I've added it now.

Mark, Adam and I really love this meal. McKinlay likes it and the two littles eat it so they can have dessert. It's so easy, inexpensive and healthy.
